Under the direction of the General Manager, The Food & Beverage Manager is responsible for the hospitality of all guests and staff members during events, tournaments, and day-to-day service at the club.
With participation, oversight and involvement in all sales and coordinating, as well as the execution of all functions. The Food & Beverage Manager must always be available to meet the demands of this seasonal operation.
General
- Answering e-mails and telephone inquiries for event bookings (events, weddings and with collaboration with the Director of Golf, golf tournaments.)
- Interfacing with the eQuinelle Resident Committee on events requiring space, and or Food & Beverage requirements
- Conduct site visits and meetings with potential clients.
- In conjunction with the Executive Chef plan, organize, and coordinate all events. (Timing, menus, suppliers, floor plans)
- Under the labour guidelines provided by the General Manager. Hire, train, supervise and schedule all front of the house staff.
- Be on site for all events, as well act as duty manager periodically.
- Coordinate with the event hosts on all aspects of the banquet function.
- Oversee all aspects of banquet function activities, being properly set up and ready for execution at the appointed time.
- Maintain constant communication with the chef, to ensure cohesion between food production and food service.
- Conduct pre-shift and pre-function meetings.
- Communicate frequently with the hosts in order to ensure their needs are being met.
- Ensures proper tear down and end of event room cleanliness.
Staff
- On-boards all new hires, ensuring proper health and safety training, position training, enters employee into point of sale software, issues punch-in codes, and adjusts hours for payroll.
- Oversees the smooth running of the Fireside Grill. Par levels for all alcohol, and beverages.
- Oversees controls that consolidate and verify usage to sales.
- Interacts with the clientele to ensure we are meeting their expectations.
- Implements schedules based on projected sales.
- Ongoing evaluation and coaching of the staff.
- Oversees the smooth running of the Café 4:15
- Ensures proper standards
- Interacts with golfers to ensure we are meeting their needs
Managerial
- Attends all management meetings
- Assists with budgetary implementation and tasks
- Ensures accurate daily sales reconciliation and postings are completed and provided to accounting. (ex. Drink ticket counts, and sales etc.)
- Ensures the correct programming of the point of sale, correct pricing, proper naming of items, correct modifiers are available.
- Creates the policy for voids, promotions and comps. Creating a tracking and verifying system.
- Handles all event billing, ensuring they are entered into the Point of Sales correctly.
- Work with accounting on the final bill to be sent to the client, verify payment has been received.
