Job Description: Sous Chef (Event Catering) at Phantom Creek Estates
We are seeking a talented and experienced Sous Chef to join our dynamic culinary team at a prestigious winery. As the Sous Chef, you will work closely with the Executive Chef to oversee and execute all aspects of event catering within our winery. You will be responsible for ensuring the highest quality culinary experiences for guests across multiple banquet spaces that offer dining to groups varying sizes. This role demands strong leadership skills, exceptional culinary expertise, and the ability to thrive in a fast-paced, high-pressure environment.
· Collaborate with the Executive Chef to develop innovative and seasonally inspired menus for events catering, considering the winery's brand and guest preferences.
· Assist in the supervision and management of all kitchen activities, ensuring a smooth and efficient operation.
· Train, mentor, and inspire a team of culinary professionals, including line cooks and kitchen assistants, fostering a positive and collaborative work environment.
· Oversee food preparation and execution, ensuring that all dishes meet the highest standards of quality, taste, and presentation.
· Monitor and maintain inventory levels of ingredients and supplies, coordinating with the Executive Chef and procurement team to ensure timely restocking.
· Ensure compliance with health and safety regulations, maintaining cleanliness and sanitation standards throughout the kitchen and food preparation areas.
· Collaborate with the Events Coordinator to plan and execute successful events, considering the specific requirements of each banquet space.
· Coordinate closely with the front-of-house staff to ensure seamless communication and timely service delivery during events.
· Assist in costing and pricing menu items, ensuring profitability while maintaining competitive pricing in the market.
· Stay updated on culinary trends, techniques, and industry innovations, incorporating them into the event catering offerings to enhance the guest experience.
· Proven experience as a Sous Chef or similar role in a high-volume, upscale catering environment.
· In-depth knowledge of culinary techniques, food presentation, and flavor profiles.
· Strong leadership and managerial skills, with the ability to motivate and inspire a team.
· Excellent organizational and multitasking abilities, capable of prioritizing tasks and meeting deadlines in a fast-paced environment.
· Outstanding communication and interpersonal skills, with the ability to collaborate effectively with colleagues and stakeholders at all levels.
· Flexible schedule, with the willingness to work evenings, weekends, and holidays as required by the events schedule.
· Knowledge of local health and safety regulations and the ability to maintain a safe and sanitary work environment.
· Culinary degree or relevant certifications are preferred but not mandatory, provided there is substantial experience in a similar role.
· Passion for food and a commitment to delivering exceptional culinary experiences to guests.
· Familiarity with winery operations or a strong interest in wine and wine pairing is advantageous.
